Delicious and savory French Onion Soup featuring Ocean’s Halo No Beef Broth!
3 large yellow onions, sliced thinly
4 Tbsp olive oil
1 tsp salt
1 TBSP all purpose flour
1 quart Ocean’s Halo® No Beef Broth
1 Tbsp white wine vinegar
1 tsp thyme, chopped fine
Salt and Black Pepper to taste
6 slices French baguette, toasted until crisp
6 slices Dairy Free Cheese (or Gruyere if not vegan)
Heat a large saucepan over Medium High heat. Add olive oil and onions. Reduce heat to Medium Low and sautee for up to 30-40 minutes, stirring occasionally, until caramelized.
Add thyme and flour, stir to coat onions. Add No Beef stock and whisk well. Bring to a boil then lower the heat to a simmer for 10-15 minutes. Add vinegar and season with salt and black pepper to taste.
Portion the soup into oven proof serving dishes and top each with 2 slices of baguette and 2 slices of cheese. Place under broiler set to HIGH until cheese bubbles. Serve immediately.
