Thai Coconut Broth

An intoxicatingly great shortcut to Tom Kha Gai soup or your favorite Thai curry recipe. No need for takeout!

THAI COCONUT SOUP RECIPE:
In a large saucepan, heat 1 tablespoon of coconut or olive oil on medium heat. Add 8 oz of thinly sliced chicken, 4 oz of sliced mushrooms and half of a bell pepper thinly sliced. I used it for my pork roast I seasoned the roast. Added some onions and garlic. Then after that was cooked down I added the broth and let the pork loin roast simmer and cook in it. Made some rice. And bam a great meal. I really liked the broth. A bit salty. But I just didn’t need to add anymore. I make a lot of roast, so I can see myself uses this a lot to cook them in.

I really like this ramen broth for the convenience! Just pour it right out of the container and its good to go. The broth is thin and therefore not too rich, but a bit salty. I think that this broth is good if you put a lot of toppings on your noodles, but if you are having just the ramen and broth, the fishy taste of the seaweed can come through pretty strongly.
